Elderly Florida couple battles Boar’s Head in court after husband’s listeria infection leads to brain damage and life-altering consequences

Food safety in the United States is facing serious challenges as more products are being recalled due to contamination.

Just this week, several frozen waffle brands were pulled from shelves after being linked to listeria, a deadly bacteria that can cause life-threatening illness.

This marks the eighth major food recall in October alone, as food supply chains continue to grow more complex, making contamination harder to control.

The Impact on Vulnerable Populations

The rise in food contamination cases poses a significant threat, especially to vulnerable individuals.

Michael Silberman, 86, from Florida, experienced firsthand how devastating a listeria infection can be.

After consuming a turkey sandwich made with Boar’s Head deli meat, he contracted listeria, which led to severe brain swelling and seizures.

Now, Michael is unable to live independently, relying on a walker and unable to care for his wife, Barbara, who suffers from arthritis.

The couple is suing Boar’s Head, claiming the listeria infection led to irreversible brain damage.

A Devastating Loss for a Texas Family

Listeria doesn’t only affect the elderly.

April Bonham, a mother-to-be from Texas, tragically lost her unborn daughter, Olive, to the infection.

At a routine 36-week scan, everything seemed fine, but just a week later, doctors discovered Olive no longer had a heartbeat.

April later learned that listeria could have been the cause, though she had no symptoms other than extreme fatigue.

Sharing her story on TikTok, April expressed the heartache of delivering her stillborn baby and how the loss will haunt her forever.

How Listeria Spreads and Affects the Body

Listeria infections begin when people consume contaminated food, often from improperly cleaned surfaces or water.

The bacteria can survive stomach acid and eventually spread through the bloodstream, leading to symptoms like fever, muscle aches, and nausea.

In more severe cases, the bacteria can reach the brain, causing confusion, loss of balance, and even convulsions.

For the elderly, pregnant women, or those with weakened immune systems, listeria infections can result in severe outcomes such as meningitis or death.

Food Industry Under Scrutiny

The complexity of modern food supply chains is contributing to the increase in contamination cases.

According to Trevor Craig, a food safety expert, longer and more intricate supply chains mean more opportunities for contamination.

Regulatory authorities are also testing more products, leading to more frequent recalls.

As consumers shift towards fresh and less processed foods, the risk of bacterial contamination continues to rise.

Lawsuits and Accountability

Boar’s Head, the company at the center of several lawsuits, has faced criticism for unsanitary conditions at one of its factories.

The Virginia-based facility was found to have mold, insects, and leaking ceilings.

This has led to multiple lawsuits, including one from the family of a Holocaust survivor who died after consuming liverwurst, and another from a woman in Missouri who fell severely ill.

Boar’s Head has since recalled over seven million pounds of meat, but the damage caused by listeria continues to unfold.

A Broader Public Health Concern

Listeria contamination isn’t a new problem.

In fact, the U.S. has seen outbreaks of this kind before, with one of the most significant occurring in 2011 when a listeria outbreak linked to contaminated cantaloupe caused 30 deaths.

The CDC reports that about 1,600 people are hospitalized with listeria every year, with around 260 fatalities.

Unfortunately, this year’s listeria outbreak linked to Boar’s Head is the most significant since the 2011 cantaloupe incident, with ten deaths and 59 hospitalizations reported.

Future Food Safety Challenges

As recalls continue, the U.S. food industry faces mounting pressure to address safety concerns.

With companies like Trader Joe’s, Walmart, and others affected, the broader issue of how to handle complex supply chains and ensure safe food handling is more critical than ever.

Experts agree that the need for stricter regulations, better hygiene practices, and more transparent supply chains is vital to preventing future outbreaks and protecting public health.
